Buttermilk biscuits

Ingredients:

  • 2 cups unbleached all-purpose flour
  • 14 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 stick butter
  • 1 cup buttermilk (I use powdered buttermilk, which is 4 TBSP powder + 1 cup water)

Directions:

  1. Preheat oven to 450.
  2. Combine dry ingredients, including the buttermilk powder.
  3. Cut in butter.
  4. Add liquid.
  5. Mix until combined.
  6. Drop onto cookie sheet and bake until golden (about 10 min.)

This makes about 20 small drop biscuits.

My Real Name

“What is my name?”

Hand poised above the form, she struggled to remember.

What name do they want? Government-approved and official? The drowsy whispers in my infant ear? The nickname I wrote so proudly at the top of my third-grade papers in wobbly cursive? The one I took on when, drunk with love, I made promises I didn’t know I couldn’t keep? Mama? Me?

With a sigh, she slowly put down the pen, the metal-ball chain clicking softly on the counter, and walked outside..

Folding the paper into an airplane, she launched it towards the sun, letting the wind and the birds sing to her of her true name.
